- Milk — 100 g (whole)
- Milk Powder — 130 g (whole)
- Saffron — 0.15 g (ground)
- Rose Water (optional) — 5 g (whole)

Tempering
Method
- Mix milk powder with a little milk and ghee, kneading gently into a soft, smooth, crack-free dough.
- Add maida and a pinch of baking soda; combine lightly without overworking the dough.
- Divide and shape into smooth, crack-free balls.
- Make the sugar syrup: dissolve sugar in water, add cardamom and saffron, and simmer until slightly sticky; stir in rose water off the heat.
- Heat oil on medium-low flame and fry the balls, stirring gently and constantly, until deep golden brown all over.
- Drop the hot fried jamuns straight into the warm rose-saffron syrup and let them soak.
- Serve piping hot, spooned with extra syrup, as is traditional at North Indian weddings.
