Tempering
Method
- Knead the khoya (mawa) gently with maida and a pinch of baking soda into a smooth, crack-free, soft dough; avoid over-kneading.
- Divide the dough into small portions and roll into smooth, crack-free balls.
- Make the sugar syrup by dissolving sugar in water with cardamom powder; simmer for 3-4 minutes until slightly sticky, then add rose water and keep the syrup warm.
- Heat oil on medium-low flame and fry the balls in batches, stirring gently and constantly, until they turn evenly golden brown all over.
- Drain the hot fried balls and drop them directly into the warm rose-scented sugar syrup.
- Let the jamuns soak, covered, for at least 1-2 hours until they double in size and fully absorb the syrup before serving.
