Deep-fried chhena balls soaked in sugar syrup. Bengali version of gulab jamun, darker and denser.

- sugar — 100 g (whole)
Tempering
Method
- Knead the chhena (paneer) with a little flour/semolina and cardamom into a smooth, soft dough; shape into smooth balls.
- Make a one-string sugar syrup with sugar, water and cardamom; keep warm.
- Heat ghee on low-medium flame and deep-fry the balls slowly, turning, until deep golden-brown all over.
- Immediately transfer the fried pantua into the warm syrup.
- Soak at least 3-4 hours (preferably overnight) so they absorb the syrup; serve.
