  1. Knead the khoya (mawa) with maida and a pinch of baking soda into a smooth, soft, crack-free dough.
  2. Divide into slightly larger-than-usual portions and roll into big, smooth, crack-free balls for the feast-size jamun.
  3. Make the sugar syrup by dissolving sugar in water with cardamom powder; simmer until slightly sticky, then stir in rose water and keep warm.
  4. Heat oil on low-medium flame and fry the large balls slowly and evenly, stirring gently, until deep golden brown all through -- larger balls need slower, longer frying to cook through the centre.
  5. Drain the hot fried balls and drop them directly into the warm rose-cardamom syrup.
  6. Let them soak for at least 2-3 hours, until fully swollen and syrup-soaked, before serving warm.
