- Milk Powder — 130 g (whole)
- Milk — 100 g (whole)
- sugar — 200 g (whole)
- All-purpose Flour — 40 g (whole)
Tempering
Method
- Mix milk powder with a little milk and ghee, kneading gently into a soft, smooth, crack-free dough.
- Add maida and a pinch of baking soda; combine lightly without overworking the dough.
- Divide and roll into smooth, crack-free balls.
- Make the sugar syrup by dissolving sugar in water with cardamom pods; simmer 3-4 minutes until slightly sticky, then keep warm.
- Heat oil on medium-low flame and fry the balls in batches, stirring gently and constantly, until evenly golden brown all over.
- Drain and drop the hot fried balls directly into the warm sugar syrup.
- Let the jamuns soak, covered, for at least 1-2 hours until they double in size and absorb the syrup before serving.
