- Curd — 100 g (whisked)
- Red Chilli Powder (Lal Mirch) — 4 g (ground)
- Lemon — 5 g (juice)
- Turmeric Powder — 1.5 g (ground)
- garam masala powder — 3 g (ground)
- ginger garlic paste — 15 g (paste)
- Gram Flour — 20 g (ground)
- Chaat masala — 3 g (ground)
- Soya Chunks — 250 g (whole)
- Mustard Oil — 15 g (whole)

Tempering
Method
- Whisk thick curd with ginger-garlic paste, red chilli powder, turmeric, garam masala, kasuri methi and chaat masala. Add roasted gram flour to thicken the marinade so it clings to the chaap.
- Coat the soya chaap pieces evenly in the marinade and refrigerate for at least 1 hour, longer for deeper flavour.
- Thread the marinated chaap onto skewers, brush with mustard oil, and grill on a tandoor, grill pan or tawa over medium-high heat, turning and basting until charred spots appear on all sides.
- Squeeze fresh lemon juice over the grilled chaap, garnish with coriander leaves and serve hot with mint or green chutney.
