
Punjabi Seekh Kebab
Minced mutton kebabs on skewers grilled over charcoal. Spiced with green chilli and coriander, Punjabi style.

Garnish
- Coriander Leaves (optional) (garnish) — 12 tbsp (chopped)
- Mint Leaves (optional) (garnish) — 8 g (chopped)

- salt (optional) (whole)
- onion — 100 g (chopped)
- garam masala powder — 3 g (ground)
- Mutton — 500 g (chopped)
- Gram Flour — 30 g (ground)
- Ginger — 15 g (chopped)
- green chillies — 12 g (chopped)
- coriander powder — 3 g (ground)
- Garlic — 15 g (chopped)
Tempering
Method
- In a large bowl, combine minced mutton with roasted gram flour, chopped onion, ginger, garlic, green chilli, garam masala, coriander powder, and salt.
- Knead well into a smooth, bindable mixture. Cover and rest in the refrigerator for 30 minutes.
- Divide the mixture into portions; mould each firmly around a skewer into a long cylindrical shape.
- Grill the skewers over hot charcoal or in a preheated tandoor/oven for 12-15 minutes, turning and basting with oil until evenly charred and cooked through.
- Slide the kebabs off the skewers, garnish with coriander leaves and serve hot with mint chutney.
