
Shivaji Nagar Seekh Kebab
Charcoal-grilled minced mutton kebabs from Shivaji Nagar lanes, bound with roasted gram flour and Bangalore-style spices. Juicy and smoky, served with mint-coriander chutney.

- green chillies — 13 g (chopped)
- Red Chilli Powder (Lal Mirch) — 4 g (whole)
- ginger garlic paste — 25 g (whole)
- garam masala powder — 4 g (whole)
- coriander powder — 4 g (whole)
- Mutton — 620 g (chopped)
- Gram Flour — 38 g (ground)
- salt (optional) (whole)
- cumin powder — 4 g (whole)
- Turmeric Powder — 2 g (whole)
- onion — 140 g (grated)
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- In a mixing bowl, combine minced mutton with grated onion (squeezed dry), ginger-garlic paste, chopped green chillies and roasted gram flour (besan).
- Add red chilli powder, cumin powder, coriander powder, garam masala powder, turmeric powder, chopped coriander leaves and salt to taste. Knead well into a firm, bindable mixture.
- Cover and rest the mixture for at least 30 minutes in the refrigerator so it firms up and holds its shape on the skewers.
- Divide into portions and mould each around a skewer into a log shape.
- Grill over hot charcoal (or in a preheated tandoor/oven), turning and basting with coconut oil, for 12-15 minutes until charred outside and cooked through.
- Rest for a couple of minutes, slide off the skewers and serve hot with mint-coriander chutney and lemon wedges.
