Garnish
- Coriander Leaves (optional) (garnish) — 30 g (chopped)
Main
- ginger garlic paste — 40 g (whole)
- Gram Flour — 60 g (ground)
- salt (optional) (whole)
- coriander powder — 6 g (whole)
- Turmeric Powder — 3 g (whole)
- onion — 200 g (grated)
- chicken — 1000 g (chopped)
- garam masala powder — 6 g (whole)
- cumin powder — 6 g (whole)
- Red Chilli Powder (Lal Mirch) — 6 g (whole)
- green chillies — 20 g (chopped)
Tempering
- Coconut Oil — 45 g (whole)
Method
- In a mixing bowl, combine minced/finely chopped chicken with grated onion (squeezed dry), ginger-garlic paste, chopped green chillies and roasted gram flour (besan).
- Add red chilli powder, cumin powder, coriander powder, garam masala powder, turmeric powder, chopped coriander leaves and salt to taste. Mix well into a firm, bindable mixture.
- Cover and rest the mixture for at least 30 minutes so it firms up and holds shape on the skewers.
- Divide into portions and mould each around a skewer into a log shape.
- Grill over hot charcoal, turning and basting with coconut oil, for 12-15 minutes until charred outside and cooked through.
- Rest for a couple of minutes, slide off the skewers and serve hot with green chutney.
