Garnish
- Coriander Leaves (optional) (garnish) — 34 g (chopped)
Main

- Lemon — 20 g (juice)
- Red Chilli Powder (Lal Mirch) — 7 g (whole)
- chicken — 1125 g (chopped)
- ginger garlic paste — 45 g (whole)
- coriander powder — 7 g (whole)
- green chillies — 23 g (chopped)
- garam masala powder — 7 g (whole)
- onion — 220 g (chopped)
- cumin powder — 7 g (whole)
- Turmeric Powder — 3 g (whole)
- Gram Flour — 68 g (ground)
Tempering
- Coconut Oil — 50 g (whole)
Method
- In a mixing bowl, combine minced/finely chopped chicken with finely chopped onion, ginger-garlic paste, chopped green chillies and roasted gram flour (besan).
- Add red chilli powder, cumin powder, coriander powder, garam masala powder, turmeric powder, lemon juice, chopped coriander leaves and salt to taste. Mix well into a firm, bindable mixture.
- Cover and rest the mixture for at least 30 minutes so the local spice rub soaks in and the mixture firms up.
- Divide into portions and mould each around a skewer into a log shape.
- Grill over hot charcoal, turning and basting with coconut oil, for 12-15 minutes until charred outside and cooked through.
- Rest for a couple of minutes, slide off the skewers and serve hot with onion rings and green chutney, roadside-grill style.
