Method
- Cut the paneer into cubes. Slice the red bell pepper and green bell pepper into chunky squares. Chop the spring onion, keeping the white and green parts separate. Finely chop the ginger, garlic and thai red chilli.
- Toss the paneer cubes with a little corn flour and salt to coat lightly, then shallow fry in hot oil in a pan till golden and crisp on all sides. Remove and drain on a plate.
- In the same pan, add a little more oil if needed and add the chopped ginger, garlic and thai red chilli. Stir-fry on high heat for a few seconds till fragrant.
- Add the spring onion whites, red bell pepper and green bell pepper, and stir-fry on high heat for 2 to 3 minutes till the vegetables are slightly charred but still crunchy.
- Add the soy sauce, tomato ketchup and red chilli sauce, and mix quickly on high heat to combine into a glossy sauce.
- Add the honey and mix through, letting the sauce bubble and thicken slightly for a minute.
- Add the fried paneer cubes back into the pan and toss well so every piece is coated evenly with the sweet and spicy sauce.
- Add salt to taste and toss for another minute on high heat so the sauce clings to the paneer.
- Garnish with the spring onion greens and chopped coriander leaves, and serve honey chilli paneer hot immediately.
