Chilli Paneer (Indo-Chinese Stir-Fry)

Chilli Paneer is a popular Indo-Chinese stir-fry — paneer cubes batter-coated with corn flour and shallow-fried, then tossed with bell peppers, spring onions, ginger, garlic, Thai red chillies, in a savoury-spicy sauce of soy sauce, red chilli sauce, and ketchup. A staple Indo-Chinese restaurant starter served as appetiser or with fried rice/Hakka noodles.

Method

  1. To begin making Chilli Paneer, mix corn flour with a quarter cup of water to make a smooth slurry.
  2. Stir in the soy sauce, tomato ketchup, red chilli sauce and salt into the corn flour mixture and keep aside.
  3. Heat sesame oil in a wok or frying pan on high heat, add garlic, ginger, thai red chillies and spring onions, and stir fry for a few seconds until fragrant.
  4. Add the paneer cubes and stir fry on high heat for 2 to 3 minutes until lightly golden on the edges.
  5. Add the bell peppers and toss on medium heat until they turn slightly tender but still crunchy.
  6. Pour in the corn flour and sauce mixture, stirring continuously, and cook for 2 to 3 minutes until the sauce thickens and coats the paneer and peppers evenly.
  7. Garnish with the remaining spring onion greens and serve hot as a starter or with fried rice.
