
Shravan Sabudana Thalipeeth
Maharashtrian Shravan/Navratri fasting flatbread of soaked sabudana (sago) mixed with mashed potato and roasted peanut powder, hand-patted into a round and shallow-fried on a tawa with ghee until crisp. Served hot with curd. About 260 calories per serving.

- Ghee — 2 tbsp (whole)
- Sabudana (Tapioca Pearls) — 150 g (soaked)
- salt (optional) (whole)
- Peanuts — 50 g (roasted)
- Potato — 150 g (boiled)
Tempering
Method
- Soak sabudana in just enough water for 5-6 hours until the pearls swell soft and a pressed pearl mashes easily. Drain any excess water.
- Boil and mash the potato. Coarsely powder the roasted peanuts. In a bowl mix soaked sabudana, mashed potato, peanut powder, chopped coriander, cumin and rock salt; knead into a soft dough. No water is needed.
- Divide into balls. On a greased sheet or banana leaf, pat each ball by hand into a flat round thalipeeth, making a small hole in the centre.
- Slide onto a hot tawa greased with ghee/oil. Drizzle a little ghee in the centre hole and around the edges. Cook on medium-low, flipping once, until golden and crisp on both sides.
- Serve the sabudana thalipeeth hot with fresh curd or a fasting peanut-coconut chutney.
