Method

  1. Soak sabudana in just enough water for 5-6 hours until the pearls swell soft and a pressed pearl mashes easily. Drain any excess water.
  2. Boil and mash the potato. Coarsely powder the roasted peanuts. In a bowl mix soaked sabudana, mashed potato, peanut powder, chopped coriander, cumin and rock salt; knead into a soft dough. No water is needed.
  3. Divide into balls. On a greased sheet or banana leaf, pat each ball by hand into a flat round thalipeeth, making a small hole in the centre.
  4. Slide onto a hot tawa greased with ghee/oil. Drizzle a little ghee in the centre hole and around the edges. Cook on medium-low, flipping once, until golden and crisp on both sides.
  5. Serve the sabudana thalipeeth hot with fresh curd or a fasting peanut-coconut chutney.
