
Sabudana Thalipeeth
Maharashtrian vrat (fasting) breakfast flatbread of soaked sabudana, mashed potato and ground roasted peanuts, patted thin and griddled on a tawa in ghee until crisp. Gluten-free, eaten during Navratri, Ekadashi and Mahashivratri. About 250 calories per serving.

- Potato — 200 g (whole)
- Ghee — 2 tbsp (whole)
- Sabudana (Tapioca Pearls) — 250 g (ground)
- Roasted Groundnuts — 35 g (whole)

Tempering
Method
- In a bowl, combine soaked sabudana, mashed potato and coarsely crushed peanuts with salt and spices. Bring together into a soft dough, adding only a little water if needed.
- Grease a sheet or banana leaf. Pat a portion of the mixture into a flat round with wet fingers, making a few holes.
- Carefully transfer onto a hot tawa greased with ghee or oil. Cook on medium flame.
- Drizzle a little ghee, flip and cook the other side until golden and crisp. Serve hot with curd or peanut chutney.
