
Pudina Paratha
Whole wheat paratha kneaded with fresh mint (pudina) leaves, rolled thin and roasted on a tawa with ghee. The mint lends a refreshing aroma to this classic North Indian breakfast flatbread, best served hot with curd or pickle.

- Wheat Flour (Atta) — 250 g (ground)
- Ghee — 20 g (whole)
- Mint Leaves — 1 cup (chopped)

Tempering
Method
- Wash and finely chop the fresh mint (pudina) leaves.
- In a large bowl, combine the wheat flour, chopped mint leaves, and a little salt.
- Add water gradually and knead into a smooth, firm dough. Cover and rest for 15-20 minutes.
- Divide the dough into equal portions. Dust with flour and roll each portion into a thin circle, like a chapati.
- Heat a tawa on medium-high flame. Place the rolled paratha on it and cook for about a minute until the base is partly cooked.
- Flip and cook the other side, then smear oil or ghee on both sides and press lightly with a spatula until golden brown spots appear.
- Garnish with fresh coriander leaves if desired and serve the pudina paratha hot with curd and pickle.
