
Navratri Rajgira Paratha
Gluten-free Maharashtrian Navratri fasting flatbread made with rajgira (amaranth) flour bound with mashed potato, seasoned with ajwain and coriander. Cooked on a tawa with ghee. Served hot with curd. About 250 calories per serving.

- ajwain — 0.5 tsp (ground)
- rajgira flour — 200 g (ground)
- salt (optional) (whole)
- Potato — 150 g (boiled)
- Ghee — 2 tbsp (whole)
- Water — 0.25 cup (whole)
Tempering
Method
- Boil 1 large potato, peel and mash it smooth with no lumps. Let it cool.
- In a bowl combine rajgira (amaranth) flour, mashed potato, ajwain, chopped coriander and rock salt. Add a little warm water gradually and knead into a smooth, soft dough. Rest 10 minutes.
- Divide the dough into equal balls. Roll each between two greased sheets or on a dusted surface into a round paratha; amaranth dough is fragile, so roll gently.
- Cook on a hot tawa, flipping carefully with a spatula. Apply ghee or oil on both sides and roast until golden brown spots appear.
- Serve the rajgira paratha hot with curd or a fasting-friendly potato sabzi.
