
Moraiyo Upma
Barnyard millet upma with peanuts, potato, and green chilli for Navratri fasting. Gujarat vrat breakfast — quick, filling, approved for all fasting days.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Potato — 100 g (chopped)
- salt (optional) (whole)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Turmeric Powder — 0.5 tsp (ground)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Peel the potato and cut it into small even cubes. Keep it aside.
- Heat the oil in a heavy-bottomed pan or kadhai on medium flame.
- Add the cumin seeds and let them sizzle and crackle for a few seconds.
- Add the potato cubes, turmeric powder and red chilli powder. Mix well so the potato is coated with the spices.
- Add salt and a little water, cover and let the potato cook on low-medium flame for 8 to 10 minutes, stirring in between, until the potato turns soft and semi-dry.
- Check that the potato is fully cooked through but the mixture is not watery, it should be semi-dry.
- Turn off the flame, garnish with fresh chopped coriander leaves and serve hot.
