
Mixed Sprouts Sabzi

- ginger garlic paste — 1 tbsp (ground)
- Coriander Leaves (optional) (chopped)
- garam masala powder — 0.5 tbsp (ground)
- green chillies paste — 1 piece (chopped)
- onion — 1 piece (chopped)
- salt (optional) (whole)
- Sunflower Oil — 2 tbsp (whole)
- Water — 3 cup (whole)
- mixed sprouts — 2 piece (whole)
- cumin powder — 0.5 tbsp (ground)
- Turmeric Powder — 0.5 tbsp (ground)
- Tomato — 1 piece (chopped)
- coriander powder — 0.5 tbsp (ground)
Tempering
- Asafoetida — 1 pinch (ground)
- Cumin Seeds — 1 tbsp (whole)
Method
- To prepare Mixed Sprouts Sabzi, get ready with the mixed sprouts, and finely chop the onion and tomato.
- In a pressure cooker, add the sprouts with a little water and pressure cook for 3-4 whistles or till lightly mushy. Once the pressure releases naturally, take out the sprouts, keep the stock aside.
- Heat sunflower oil in a pan, add cumin seeds and asafoetida, and let them crackle.
- Add the chopped onion and saute till golden brown, then add ginger garlic paste and green chilli paste and saute for a minute.
- Add the chopped tomato, turmeric powder, red chilli powder, coriander powder and cook till the tomatoes turn soft and the oil separates.
- Add the cooked sprouts along with the reserved water, salt to taste, and mix well. Cover and simmer for 8-10 minutes.
- Add garam masala powder, mix well, and garnish with coriander leaves before serving hot.
