
Masala Dosa
Crispy rice-lentil crepe with potato masala. South Indian staple adopted across MP urban areas.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Potato — 250 g (chopped)
- Turmeric Powder (optional) — 2 g (whole)
- Urad Dal — 80 g (whole)
- methi seeds (optional) — 3 g (whole)
- rice — 300 g (ground)
- green chillies (optional) — 8 g (whole)
- salt (optional) — 8 g (whole)
Tempering
- oil — 20 tbsp (whole)
- onion — 60 g (chopped)
- Mustard Seeds (Black) (optional) — 3 g (whole)
- Curry Leaves (optional) — 2 g (whole)
Method
- Soak rice, urad dal and fenugreek seeds for 4-6 hours. Grind to a smooth batter, add salt, and ferment in a warm place for 8 hours.
- Boil the potatoes until soft, peel and mash coarsely.
- Heat oil, splutter mustard seeds and curry leaves, then sauté chopped onion and green chilli until soft.
- Add turmeric powder and the mashed potato, mix well, season with salt and keep the masala warm.
- Heat a tawa, pour a ladleful of batter and spread thin into a large round.
- Drizzle oil and cook until the base turns crisp and golden.
- Place a portion of potato masala in the centre, fold, garnish with coriander leaves and serve hot with sambar and coconut chutney.
