Method

  1. Clean the chicken pieces and rub them with salt, Ginger, Garlic, Red Chilli Powder and garam masala powder; let the marinade penetrate, covered, in the refrigerator for 3-4 hours.
  2. Heat a heavy, flat pan or griddle on medium-high flame until very hot, like a stone slab.
  3. Place the marinated chicken pieces flat on the pan and press down gently so they make full contact with the hot surface.
  4. Cook on medium-high flame for 6-7 minutes on the first side, without moving, until a deep golden, spiced crust forms.
  5. Flip the chicken pieces and cook for another 6-7 minutes on the other side until cooked through and similarly crusted.
  6. Reduce the flame to low and let the chicken finish cooking for 2-3 minutes, until the surface turns crisp and lightly charred in spots.
  7. Garnish with Coriander Leaves and serve hot straight from the pan.
