
Hyderabadi Irani Chai

Ingredients
- Milk — 100 g (whole)
- sugar — 2 tbsp (whole)
- salt (optional) (whole)
- Water — 2 cup (whole)
- assam tea leaves — 2 tsp (whole)
Method
- Bring the water to a boil, add the Assam tea leaves and simmer on low for 8-10 minutes to make a strong, dark decoction (kadak chai).
- Separately, simmer the milk on low heat until it reduces slightly and turns thick and creamy.
- Strain the tea decoction into cups. Add sugar to taste and stir to dissolve.
- Top each cup with the hot reduced milk, pouring from a height for the signature frothy layer. Serve hot.
