
Irani Chai
A Telangana / Hyderabad style spiced black tea. This vegan version is a strong CTC Assam tea decoction simmered with green cardamom and sweetened with sugar (no milk), served hot. The classic Irani-cafe version is traditionally made creamy with milk and khoya.

Ingredients
- Cardamom — 6 piece (ground)
- Chai Patti (CTC - Strong Assam Tea) — 2 tbsp (whole)
- Water — 2 cup (whole)
- sugar — 1 tbsp (whole)
Method
- Boil water in a small pan or kettle.
- Add Chai Patti (CTC Assam tea) and crushed cardamom, and let it boil for 2 to 3 minutes so the flavour infuses well.
- Add sugar and stir until dissolved, then let it simmer for another minute for a strong, dark brew.
- Strain the Irani chai into small cups.
- Serve hot, traditionally on its own without milk, alongside biscuits or bun maska.
