Hyderabadi Dum Chai

Hyderabadi dum chai is a slow-simmered Irani-style spiced tea where strong Assam tea is cooked low with milk, sugar, ginger and whole spices - cardamom, cinnamon, cloves and black pepper - until rich and aromatic. Served hot.

  1. firstly, in a small vessel take 1 cup water.
  2. tie a cloth on top using a rubber band or thread.
  3. add 2 tbsp tea powder, 1 tbsp sugar, 1 inch ginger, 6 pods cardamom, ½ tsp pepper, 1 inch cinnamon and ½ tsp cloves.
  4. place the vessel in the cooker.
  5. add some water on the bottom of the cooker.
  6. cover and pressure cook for 1 whistle or until all the flavours are absorbed by the water.
  7. after the pressure settles down, sqeeze off the decoction from the cloth.
  8. a strong tea decoction is ready.
  9. in a saucepan take 2 cup milk and get to a boil.
  10. add prepared tea decoction and mix well.
  11. get the tea to a boil.
