
Hyderabadi Dum Chai
Hyderabadi dum chai is a slow-simmered Irani-style spiced tea where strong Assam tea is cooked low with milk, sugar, ginger and whole spices - cardamom, cinnamon, cloves and black pepper - until rich and aromatic. Served hot.

Ingredients
- black pepper — 0.5 tsp (whole)
- Cloves — 0.5 tsp (whole)
- Ginger — 1 inch (chopped)
- Chai Patti (CTC - Strong Assam Tea) — 2 tbsp (whole)
- sugar — 1 tbsp (whole)
- Water — 1 cup (whole)
- cinnamon stick — 1 inch (ground)
- Cardamom — 6 piece (ground)
- Milk — 2 cup (whole)
Method
- firstly, in a small vessel take 1 cup water.
- tie a cloth on top using a rubber band or thread.
- add 2 tbsp tea powder, 1 tbsp sugar, 1 inch ginger, 6 pods cardamom, ½ tsp pepper, 1 inch cinnamon and ½ tsp cloves.
- place the vessel in the cooker.
- add some water on the bottom of the cooker.
- cover and pressure cook for 1 whistle or until all the flavours are absorbed by the water.
- after the pressure settles down, sqeeze off the decoction from the cloth.
- a strong tea decoction is ready.
- in a saucepan take 2 cup milk and get to a boil.
- add prepared tea decoction and mix well.
- get the tea to a boil.
- finally, enjoy Dum Ki Chai Recipe with some biscuits.
