Ingredients
- Chura (Coarse Red Flat Rice - Bihar Variety) — 150 g (ground)
- Curd — 400 g (whole)
- Jaggery — 100 g (whole)
- salt (optional) (whole)
Method
- Pick over the chura to remove any husk or grit, then rinse it briefly in water and drain well so it softens slightly but does not turn mushy.
- Whisk the curd in a bowl until smooth and creamy.
- Add the jaggery to the curd and mix well until it dissolves, breaking up any lumps with your fingers or a spoon.
- Add a pinch of salt to balance the sweetness.
- Add the soaked chura to the sweetened curd and mix gently so every grain is coated.
- Let it rest for 5 to 10 minutes so the chura absorbs the curd and softens fully.
- Serve immediately in a bowl, at room temperature or slightly chilled, as a light snack or breakfast.
