Bonalu Special Mutton

Method

  1. Clean the Mutton pieces thoroughly and pat dry. Roughly chop the onion, Tomato, Ginger and Garlic. Keep the coriander powder, Red Chilli Powder and Turmeric Powder measured and ready.
  2. Heat Coconut Oil in a heavy-bottomed kadhai. Add Mustard Seeds and let them splutter, then add Urad Dal and fry until light golden.
  3. Add Curry Leaves and let them crackle for a few seconds.
  4. Add the chopped onion and saute on medium flame until deep golden brown.
  5. Add Ginger and Garlic, and saute for a minute until the raw smell disappears.
  6. Add chopped Tomato and cook until soft and the oil separates from the masala.
  7. Add Turmeric Powder, Red Chilli Powder and coriander powder. Mix well and cook briefly until fragrant.
  8. Add the Mutton pieces and sear on high flame for 2 to 3 minutes, turning to coat evenly with the masala.
  9. Pour in enough hot liquid to just cover the Mutton, add salt to taste, cover and simmer on medium-low flame until the mutton is fully tender, about 30 minutes.
  10. Once the gravy has thickened to the desired consistency, taste and adjust salt.
  11. Garnish with Coriander Leaves if desired and serve hot.
