
Bonalu Special Mutton
Spicy mutton curry prepared as offering during Bonalu festival. Telangana Bonalu temple community feast meat dish.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Mutton — 250 g (chopped)
- Ginger — 1 tsp (ground)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)

- Turmeric Powder — 0.5 tsp (ground)
- Garlic — 1 tsp (ground)
- Tomato — 2 piece (chopped)
- onion — 2 piece (chopped)
Tempering
- Urad Dal — 1 tsp (whole)
- Curry Leaves — 8 piece (ground)
- Coconut Oil — 2 tbsp (whole)
- Mustard Seeds (Black) — 1 tsp (whole)
Method
- Clean the Mutton pieces thoroughly and pat dry. Roughly chop the onion, Tomato, Ginger and Garlic. Keep the coriander powder, Red Chilli Powder and Turmeric Powder measured and ready.
- Heat Coconut Oil in a heavy-bottomed kadhai. Add Mustard Seeds and let them splutter, then add Urad Dal and fry until light golden.
- Add Curry Leaves and let them crackle for a few seconds.
- Add the chopped onion and saute on medium flame until deep golden brown.
- Add Ginger and Garlic, and saute for a minute until the raw smell disappears.
- Add chopped Tomato and cook until soft and the oil separates from the masala.
- Add Turmeric Powder, Red Chilli Powder and coriander powder. Mix well and cook briefly until fragrant.
- Add the Mutton pieces and sear on high flame for 2 to 3 minutes, turning to coat evenly with the masala.
- Pour in enough hot liquid to just cover the Mutton, add salt to taste, cover and simmer on medium-low flame until the mutton is fully tender, about 30 minutes.
- Once the gravy has thickened to the desired consistency, taste and adjust salt.
- Garnish with Coriander Leaves if desired and serve hot.
