
Bheja Fry
Bheja fry is a Mumbai offal specialty of goat/mutton brain (bheja), cleaned and gently pan-fried with onion, ginger-garlic and a freshly ground masala until soft and rich. Popular Bohra/Irani street fare, eaten with pav or roti.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- onion — 150 g (chopped)
- coriander powder — 2 tsp (whole)
- green chillies — 10 g (chopped)
- salt (optional) (whole)
- Mutton Brain — 500 g (chopped)
- ginger garlic paste — 2 tsp (paste)
- garam masala powder — 0.5 tsp (whole)
- Turmeric Powder — 1 tsp (whole)
- Red Chilli Powder (Lal Mirch) — 1.5 tsp (whole)
Tempering
Method
- Gently clean the brain, removing the thin membrane and veins, and soak in water for about 30 minutes. Drain and cut into pieces.
- Heat oil and saute onions, ginger and garlic until soft and golden.
- Add turmeric, salt and the spice masala and cook briefly until fragrant.
- Add the brain pieces and pan-fry gently, tossing carefully, for just a few minutes until cooked through - do not overcook or it turns rubbery.
- Garnish with chopped coriander and serve hot with pav or roti.
