
Mandakki Shengdana
Solapur-style mandakki shengdana: a light, crunchy snack of puffed rice tossed with roasted peanuts, tempered oil and coriander. Quick to assemble and eaten fresh.

- Peanuts — 40 g (whole)
- Kurmura / Mandakki — 60 g (whole)
Tempering
Method
- Lightly dry-roast the puffed rice in a pan for 2-3 minutes until crisp; keep aside.
- Heat oil and fry the peanuts until crunchy; you can add a tempering of mustard, curry leaves and a pinch of turmeric.
- Add the crisp puffed rice to the pan and toss well so the peanuts and tempering coat it evenly. Season with salt.
- Toss for another minute on low flame until everything is dry and crunchy.
- Garnish with fresh coriander and serve immediately while crisp.
