
Cheese Vada Pav
Mumbai-style vada pav with a cheesy twist: spiced mashed potato mixed with grated cheese, coated in gram-flour batter, deep-fried and sandwiched in a soft pav bun with chutney.

- Coriander Leaves (garnish) — 8 g (chopped)

- pav buns — 3 piece (whole)
- Ginger — 4 g (chopped)
- Garlic — 6 g (chopped)
- cheese — 45 g (grated)
- Gram Flour — 45 g (ground)
- Potato — 200 g (mashed)
- salt (optional) (whole)
- green chillies — 6 g (chopped)
- Turmeric Powder — 1 g (ground)
Tempering
- Mustard Seeds (Black) — 2 g (whole)
- oil — 2 tbsp (whole)
- Curry Leaves — 2 g (whole)
Method
- Boil and mash the potatoes. Heat a little oil and temper mustard seeds, curry leaves, chopped garlic, ginger and green chillies.
- Add turmeric powder and the mashed potato to the tempering; mix well, then fold in the grated cheese and coriander leaves. Shape into small balls.
- Make a thick batter with gram flour, a pinch of turmeric, salt and water. Dip each potato-cheese ball into the batter to coat evenly.
- Heat oil in a deep kadhai and deep-fry the coated balls in batches on medium flame until golden brown and crisp. Drain on paper towels.
- Slit the pav buns, smear with chutney, sandwich the hot cheese vada inside and serve immediately.
