Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Turmeric Powder — 2 g (ground)
- ginger garlic paste — 3 piece (ground)
- salt (optional) (whole)
- green chillies — 8 g (chopped)
- Potato — 400 g (chopped)
- pav buns — 5 piece (whole)
- Gram Flour — 1 cup (ground)
Tempering
- Asafoetida — 0.5 g (ground)
- oil — 2 tbsp (whole)
- Curry Leaves — 2 g (whole)
- Mustard Seeds (Black) — 4 g (whole)
Method
- Boil and mash the potatoes, keeping the mash slightly chunky.
- Heat a little oil, splutter mustard seeds, then add curry leaves, green chilli, ginger-garlic paste, asafoetida and turmeric; saute briefly.
- Add the mashed potato and salt, mix well, and shape into small balls.
- Make a smooth batter with gram flour, water and a pinch of salt; dip each potato ball in the batter and deep-fry in hot oil until golden and crisp.
- Slit the pav buns, spread with green and garlic chutney, sandwich a hot vada inside and serve immediately.
