Soft yeasted maida buns stuffed with a lightly spiced mashed potato filling, brushed with milk and baked till golden - a healthier, oven-baked take on Mumbai's classic vada pav.

  1. Activate the dry yeast in warm milk with a pinch of the sugar. Let it rest for 5-10 minutes until frothy.
  2. Add maida and salt to the yeast mixture and knead into a soft dough for about 10 minutes.
  3. Add the softened butter and knead for another 5 minutes until the dough turns smooth and elastic.
  4. Cover and rest the dough in a warm place for 2 hours, until it doubles in size.
  5. Meanwhile, boil and mash the potatoes. Heat a little oil, add mustard seeds and let them splutter, then add curry leaves, turmeric powder and chopped green chilli; saute briefly.
  6. Add the mashed potato, mix well, season with salt and cook for 2-3 minutes to make the aloo masala filling. Cool completely.
  7. Punch down the risen dough to release the air, knead briefly, and divide into 6 equal portions; shape each into a ball.
  8. Flatten each ball, place a portion of the aloo masala filling and a little dry garlic chutney at the centre, then seal the edges.
  9. Arrange the stuffed balls in a greased loaf tray, cover and rest for 1 hour.
  10. Brush the tops with milk and bake at 180 degrees Celsius for 25 minutes until golden.
  11. Allow the buns to cool completely before serving.
