
Navratri Sabudana Wada
Crisp Maharashtrian Navratri/upvas fritters of soaked sabudana (sago) bound with mashed potato and coarsely crushed roasted peanuts, spiced with cumin and green chilli, shaped into patties and deep-fried golden. Served hot with curd or fasting peanut chutney. About 300 calories per serving.

- Potato — 150 g (boiled)
- Peanuts — 75 g (roasted)
- Sabudana (Tapioca Pearls) — 200 g (soaked)

Tempering
Method
- Soak sabudana in just enough water for 5-6 hours until pearls swell soft and mash easily. Drain off any excess water.
- Boil and mash the potato; coarsely crush the roasted peanuts. Mix soaked sabudana, mashed potato, crushed peanuts, cumin, chopped coriander and rock salt. Combine well into a dough that holds shape.
- Grease your palms and shape the mixture into smooth round patties (vadas), pressing to flatten slightly.
- Heat oil in a kadhai on medium flame. Slide in the vadas in batches and deep-fry, turning, until golden brown and crisp. Drain on paper.
- Serve the sabudana vada hot with curd or a fasting peanut-coconut chutney.
