  1. Wash the rice thoroughly and cook with water using the absorption method until soft and fully done; stir in the ghee once cooked.
  2. Dry-roast the whole red chillies directly over an open flame or on a hot tawa until charred and fragrant.
  3. Pound the roasted chillies with salt using a mortar and pestle into a coarse mosdeng chutney.
  4. Garnish the rice with fresh coriander leaves.
  5. Serve the hot ghee rice with the mosdeng chutney and mixed vegetable sides, as prepared during Garia Puja celebrations.
