
Tripuri Wahan Mosdeng Festival Rice

- dry red chillies — 10 tsp (whole)
- Ghee — 2 tbsp (whole)
- rice — 250 g (ground)
- salt (optional) (whole)
- Water — 1 cup (whole)
Method
- Wash the rice thoroughly and cook with water using the absorption method until soft and fully done; stir in the ghee once cooked.
- Dry-roast the whole red chillies directly over an open flame or on a hot tawa until charred and fragrant.
- Pound the roasted chillies with salt using a mortar and pestle into a coarse mosdeng chutney.
- Garnish the rice with fresh coriander leaves.
- Serve the hot ghee rice with the mosdeng chutney and mixed vegetable sides, as prepared during Garia Puja celebrations.
