
Pork Bharta
Boiled pork mashed with roasted chillies, onion, ginger, garlic, and coriander leaves, finished with a touch of mustard oil - the tribal Tripuri dish also known as Wahan Mosdeng.

Garnish
- Coriander Leaves (garnish) — 10 g (chopped)
Main
- dry red chillies — 10 g (whole)
- Garlic — 15 g (chopped)
- Pork Belly — 500 g (chopped)
- onion — 150 g (chopped)
- Ginger — 20 g (chopped)
- salt (optional) (whole)
Tempering
- Mustard Oil — 15 g (whole)
Method
- Bring water to a boil in a large pot. Add the pork pieces and salt; boil for 5 minutes and skim off any scum that rises.
- Add the sliced onion and chopped garlic to the pot. Cover and simmer on low heat for 35-40 minutes until the pork is fork-tender.
- Meanwhile, roast the dried red chillies directly over an open flame or on a hot tawa until charred and blistered. Coarsely crush them.
- Drain the cooked pork, reserving a little stock, and mash it well with a pestle or the back of a spoon.
- Mix in the grated ginger, crushed roasted chillies, and chopped coriander leaves. Adjust salt to taste.
- Finish with a drizzle of mustard oil and mix well. Serve the Pork Bharta warm as a Tripuri-style mashed pork side with steamed rice.
