
Aloo Pitika
Mashed potato with mustard oil, onion, and green chilli. Assamese comfort side dish with rice.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- green chillies — 2 piece (chopped)
- salt (optional) (whole)
- Potato — 250 g (chopped)
- onion — 100 g (chopped)
- Mustard Oil — 2 tbsp (raw)
Method
- Boil the potatoes until soft and easily mashable, about 15-20 minutes. Peel while still warm.
- Mash the boiled potatoes coarsely with a fork or masher. Keep the texture slightly chunky, not fully smooth.
- Add finely chopped raw onion, chopped green chillies, chopped coriander leaves and salt to the mashed potato.
- Drizzle raw mustard oil over the mash and mix everything well by hand. Serve at room temperature with rice.
