
Tribal Bamboo Shoot Sabzi
Fresh bamboo shoot curry from Dangs forests. Monsoon-only delicacy — young bamboo shoots fermented briefly, cooked with tribal spices and green chilli.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- coriander powder — 1 tsp (ground)
- Bamboo Shoot (Kanile) — 250 g (chopped)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- salt (optional) (whole)
- Turmeric Powder — 0.5 tsp (ground)
Tempering
- oil — 2 tbsp (whole)
- green chillies — 15 g (slit)
- Cumin Seeds — 1 tsp (whole)
Method
- Clean the young bamboo shoots, slice thin and boil in water (changing the water once) to remove bitterness. Drain.
- Heat oil in a kadhai, splutter cumin seeds and add slit green chillies.
- Add turmeric, red chilli and coriander powder with the boiled bamboo shoots and salt. Toss to coat.
- Cover and cook on low flame, stirring occasionally, until the bamboo shoots are tender and the masala dries down to a semi-dry sabzi.
- Garnish with chopped coriander leaves and serve hot with rice or rotlo.
