  1. Wash cauliflower florets well, then submerge in salted hot water 5 minutes to dislodge any insects. Drain thoroughly.
  2. Heat oil in a wide kadai on medium. Add ginger-garlic paste and slit green chillies; sauté 30-45 seconds until raw smell dissipates.
  3. Add chopped tomatoes, turmeric, red chilli powder, coriander powder, cumin powder, and salt. Cook 4-5 minutes, breaking tomatoes with the spatula, until pulpy and oil starts separating.
  4. Add cauliflower florets and potato cubes. Stir to coat with the masala. Sprinkle 2 tbsp water (just enough to keep moisture).
  5. Cover with lid, reduce flame to low. Cook 12-15 minutes, stirring gently every 4 minutes. The vegetables steam in their own juices — minimal water keeps them dry.
  6. Uncover, increase flame slightly to evaporate any moisture. Sprinkle garam masala and amchoor. Stir gently, cook 2 minutes.
  7. Switch off heat. Garnish with chopped coriander leaves. Serve hot with phulka, rice, or alongside Sindhi Kadhi.
