Authentic Sindhi-Hindu Seyal Bhindi Patata — okra and potatoes cooked in layered fashion over a sweet caramelised onion base, finished with tomatoes. 'Seyal' is the Sindhi technique of cooking vegetables in their own juices with minimal water, layered like a casserole. Served at Sindhi weddings and Sunday brunches with phulka or Sindhi Khichdi. Distinct from Punjabi Aloo Bhindi (dry-fried, no layering) — the Seyal layered method is Sindhi signature.

  1. Wash bhindi thoroughly and pat completely DRY (any water makes it slimy). Trim ends and halve lengthwise. Set aside.
  2. In a small bowl, combine garlic paste, chopped green chillies, coriander powder, red chilli powder, turmeric, cumin powder, and a portion of salt. Mix to a thick masala paste — add 2 tsp water if needed.
  3. Heat 3 tbsp oil in a wide heavy-bottomed pan. Add chopped onions with a pinch of salt. Cook on medium-low 10-12 minutes, stirring occasionally, until onions are translucent and lightly golden — DO NOT brown deeply, just sweat them.
  4. Spread the cooked onions evenly on the pan bottom. Arrange potato slices over them in a single overlapping layer.
  5. Place the bhindi halves on top of the potatoes in a single layer. Spoon HALF the masala paste over the bhindi. Drizzle 1 tbsp oil. Cover with tight lid.
  6. Cook covered on LOW flame 10 minutes — do not stir. The vegetables should steam in their own juices.
  7. Layer sliced tomatoes over the bhindi. Spoon remaining masala over tomatoes, drizzle remaining 1 tbsp oil. Cover and cook 10 minutes on low.
  8. Gently fold the layers together — do not stir vigorously, the bhindi should hold shape. Cover and cook 5 more minutes on low until potatoes pierce easily with a fork.
  9. Switch off heat. Garnish with chopped coriander leaves. Serve hot with phulka, Sindhi khichdi, or plain rice.
