Authentic Sindhi-Hindu Gwar Ji Bhaji — fresh cluster beans (gwar/gawar) trimmed, boiled with a pinch of baking soda for emerald-green colour, then tossed with a tempering of crushed garlic, green chillies, and crushed anardana (dried pomegranate seeds). The anardana-garlic combo IS the Sindhi signature — provides the sour-pungent backbone that distinguishes it from generic Indian cluster bean sabzis. Served with phulka, jowar, or bajra roti.

  1. Wash cluster beans thoroughly. Trim ends and strings. Cut each bean into 1-inch pieces.
  2. Boil the cut beans in plenty of water with 1 tsp salt and a pinch of baking soda (this preserves the bright green colour). Cook 8-10 minutes until tender but firm-bite.
  3. Drain the boiled beans through a colander and let excess water run off. Rinse briefly with cold water to stop further cooking. Set aside.
  4. Heat 2 tbsp oil in a kadai on medium. Add crushed garlic and chopped green chillies. Sauté 1-2 minutes until garlic is light golden and aromatic (do NOT brown — Sindhi style is to keep garlic pale).
  5. Reduce flame to low. Add turmeric, red chilli powder, coriander powder, cumin powder, and crushed anardana. Stir 30 seconds — anardana will release its tangy aroma.
  6. Add the boiled drained cluster beans to the pan. Toss thoroughly to coat with the spice-anardana-garlic mixture. Stir-fry 3-4 minutes on medium so beans absorb the flavours.
  7. Adjust salt. Switch off heat. Serve warm with phulka, jowar roti, or bajra roti.
