Authentic Sindhi-Hindu Macrolyun Patata — macaroni (called 'macrolyun' in Sindhi) cooked sabzi-style in a tomato-ginger gravy with potato cubes. A modern Sindhi household adoption of pasta into traditional Indian curry format. Distinct from Italian pasta sauces — Sindhi version uses cumin tempering, Indian spices, and serves with rotis or as a one-pot meal. Particularly popular as a quick weekday lunch in Sindhi homes.

  1. Bring a large pot of water to a boil with 1 tsp salt and 1 tsp oil. Add macaroni and cook 6-8 minutes until al dente (firm-bite, not mushy). Drain. Toss with 1/2 tsp oil to prevent sticking. Set aside.
  2. Heat 2 tbsp oil in a wide pan on medium. Add cumin seeds; let crackle 5-10 seconds.
  3. Add ginger paste (and garlic if using). Sauté 30 seconds until raw smell goes.
  4. Add chopped fresh tomatoes. Cover and cook 4-5 minutes on medium until tomatoes soften and break down.
  5. Add cubed potatoes, turmeric, red chilli powder, coriander powder, cumin powder, and salt. Stir-fry 2-3 minutes to coat potatoes with masala.
  6. Stir in tomato puree. Cook 1-2 minutes until oil starts to separate around the masala.
  7. Add 1/2 cup water. Cover and simmer on medium-low 8-10 minutes until potatoes are fork-tender.
  8. Gently fold in the cooked macaroni. Stir to coat with gravy. Simmer uncovered on low 30 seconds — just to warm through and let macaroni absorb flavours.
  9. Switch off heat. Garnish with chopped coriander leaves. Serve hot with phulka or yogurt.
