
Tandoori Momos

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Garlic — 10 g
- All-purpose Flour — 150 g (ground)
- chicken — 100 g (chopped)
- Lemon — 15 g
- garam masala powder — 3 g
- Curd — 60 g
- salt (optional) (whole)
- Red Chilli Powder (Lal Mirch) — 8 g
- Ginger — 10 g
Tempering
Method
- Knead maida with water and a little oil into a smooth, firm dough; cover and rest for 20-30 minutes.
- Mix the minced chicken filling with salt and a little oil.
- Roll small discs from the dough, place the filling in the centre, pleat the edges and seal into momo shapes.
- Steam the momos in a steamer for 10-12 minutes until the wrapper is cooked through and glossy.
- Whisk curd with ginger, garlic, red chilli powder, garam masala, lemon juice and salt; coat the steamed momos in this tandoori marinade.
- Grill or pan-char the coated momos (or finish in a hot tandoor/oven) for 3-5 minutes until lightly charred. Garnish with coriander leaves and serve hot with green chutney.
