  1. Slit the large green chillies lengthwise and deseed; sprinkle a little salt inside and let them rest for 10 minutes to mellow the heat.
  2. Mash the boiled potatoes with ginger, coriander powder, red chilli powder, ajwain, hing and salt to make the stuffing.
  3. Fill the slit chillies generously with the potato stuffing.
  4. Make a thick batter with besan, rice flour, turmeric and water; dip each stuffed chilli in the batter to coat well.
  5. Deep-fry in medium-hot oil until golden brown and crisp on all sides.
  6. Drain on paper towels, garnish with coriander leaves and serve hot with green chutney and chai.
