- ajwain — 2 g
- green chillies — 400 g (chopped)
- salt (optional)
- Turmeric Powder — 2 g
- Red Chilli Powder (Lal Mirch) — 5 g
- Rice Flour — 20 g
- coriander powder — 5 g
- Gram Flour — 150 g
- Potato — 300 g (chopped)
- Ginger — 10 g
Tempering
Method
- Slit the large green chillies lengthwise and deseed; sprinkle a little salt inside and let them rest for 10 minutes to mellow the heat.
- Mash the boiled potatoes with ginger, coriander powder, red chilli powder, ajwain, hing and salt to make the stuffing.
- Fill the slit chillies generously with the potato stuffing.
- Make a thick batter with besan, rice flour, turmeric and water; dip each stuffed chilli in the batter to coat well.
- Deep-fry in medium-hot oil until golden brown and crisp on all sides.
- Drain on paper towels, garnish with coriander leaves and serve hot with green chutney and chai.
