Authentic Sindhi-Hindu Tamatar Ji Kadhi — a lighter, brighter cousin of classic Sindhi Kadhi where tomatoes (not tamarind) provide the sour element. Roasted besan thickens a tomato-puree-rich broth seasoned with cumin, mustard, fenugreek seeds, ginger, asafoetida, and curry leaves; finished with vegetables (okra, drumstick, potato, peas). Contains no onion or garlic; easier on digestion than the tamarind version. Served with steamed rice and Aloo Tuk.

  1. Heat oil in a heavy-bottomed pot or pressure cooker on medium. Add cumin seeds and mustard seeds; let them splutter. Add chopped ginger, green chillies, asafoetida, and curry leaves. Stir 30 seconds.
  2. Add besan (chickpea flour) gradually while stirring. Roast on LOW flame, stirring constantly, 4-5 minutes until besan turns light reddish-brown and smells nutty. Do not let it burn.
  3. Add salt, turmeric, and red chilli powder. Stir 30 seconds.
  4. Pour in tomato puree and add fenugreek seeds. Stir well. Add cubed potatoes. Cook 3-4 minutes — tomatoes will start releasing oil.
  5. Add 1.25 liters (about 5 cups) of water. Stir to dissolve the besan-tomato mass uniformly — no lumps. Bring to a boil.
  6. Add drumsticks. Cook 10 minutes on medium until potatoes are nearly done.
  7. Add okra and green peas. Simmer on medium-low 15-20 minutes, stirring occasionally — okra cooks but should not become mushy.
  8. Switch off heat. Garnish with chopped coriander leaves. Serve hot with steamed rice and Sindhi Aloo Tuk.
