
Ranchi Pakora Sabzi

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Garlic — 1 tsp (ground)
- salt (optional) (whole)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Ginger — 1 tsp (ground)
- coriander powder — 1 tsp (ground)
- onion — 100 g (chopped)
- Tomato — 100 g (chopped)
- Gram Flour — 100 g (ground)
- Turmeric Powder — 0.5 tsp (ground)
Tempering
- Cumin Seeds — 1 tsp (whole)
- Mustard Oil — 2 tbsp (whole)
Method
- Make a thick batter with the gram flour (besan), a little salt, a pinch of turmeric and water.
- Heat mustard oil in a kadhai and drop small spoonfuls of batter to fry crisp pakoras; drain and set aside.
- In the same kadhai temper cumin seeds.
- Add chopped onion and saute until golden.
- Add ginger and garlic paste and saute until the raw smell goes.
- Add chopped tomato and cook until soft and the oil separates.
- Add turmeric, red chilli and coriander powders with salt; mix well.
- Pour in about two cups of water and bring the gravy to a boil.
- Add the fried pakoras and simmer 4-5 minutes until they soak up the gravy.
- Garnish with coriander leaves and serve hot with rice or roti.
