
Dham Boor Ki Kadhi
Gram flour fritters in thin yogurt kadhi. Essential Mandi dham feast course served with rice.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Gram Flour — 50 g
- salt (optional) (whole)
- Curd — 220 g (whole)
- Turmeric Powder — 0.5 tsp (ground)
Tempering
- Asafoetida — 0.5 g
- Cumin Seeds — 1 tsp
- oil — 2 tbsp (whole)
Method
- Make a smooth, thick batter with two-thirds of the gram flour, a pinch of salt, and a little water -- thick enough to hold its shape when dropped (this is the boor).
- Whisk the curd with water until smooth and thin, then whisk in the remaining gram flour, turmeric, and red chilli powder.
- Heat oil in a kadhai. Add cumin seeds and hing; let them sizzle.
- Pour in the whisked curd mixture and bring to a gentle boil, stirring continuously to prevent curdling.
- Drop small portions of the thick gram-flour batter into the simmering kadhi to form the boor. Simmer on low heat for 20-25 minutes until the boor are cooked through and the kadhi is thin and well-blended.
- Adjust salt, garnish with coriander leaves, and serve hot with steamed rice as the essential Dham feast course.
