Broccoli Pakora Masala Broccoli In Spicy Yogurt Gravy

Modern Indian fusion curry — broccoli florets dipped in spiced besan-rice flour batter and deep-fried into pakoras, then simmered in a tangy yogurt gravy tempered with mustard, cumin and asafoetida, finished with red chilli, garam masala and lemon. A kadhi-pakora cousin using broccoli instead of onion fritters.

  1. To begin, preheat the oven to 200°C (400°F) and lightly grease a baking tray with a little of the oil. Cut the broccoli into small florets.
  2. In a bowl, mix the gram flour, rice flour, baking soda, turmeric powder and salt with a little water into a thick batter that coats the back of a spoon.
  3. Dip the broccoli florets in the batter to coat them well, place them on the greased tray and bake for about 15 minutes, turning once, till light brown and crisp, then keep aside.
  4. Meanwhile, heat the remaining oil in a wide pan and crackle the mustard seeds, cumin seeds and asafoetida.
  5. Add the finely chopped onion and sauté till soft and golden brown.
  6. Lower the heat and add the red chilli powder, coriander powder and garam masala, then whisk the curd with a little water, pour it in and keep stirring so it does not split.
  7. Add the water to get a smooth pouring gravy, season with salt and simmer for 2 to 3 minutes.
  8. Add the baked broccoli pakoras and simmer for another 2 minutes till they soak up the gravy, then squeeze in the lemon juice and serve hot.
