- Red Chilli Powder (Lal Mirch) — 2 tsp (ground)
- Cauliflower — 300 g (chopped)
- Mustard Oil — 0.5 cup (whole)
- salt — 35 g (whole)
Tempering
- methi seeds — 1.8 g (whole)
- Mustard Seeds (Black) — 1 tsp (whole)
Method
- Wash the cauliflower florets and pat them completely dry; cut into small pieces.
- Rub the florets with the salt and set aside for a few hours to soften and release moisture.
- Dry roast the mustard seeds and fenugreek seeds briefly; crush coarsely.
- Heat the mustard oil until it smokes lightly, then let it cool completely.
- Mix the cauliflower with the red chilli powder and crushed spices, then pour over the cooled mustard oil to form a loose brine.
- Transfer to a glass jar; ferment in a cool spot for several days, stirring occasionally, before serving through the cold months.
