
Srinagar Kulcha Naan
Srinagar-style sesame-topped baked bread from tandoor. Served hot with butter for breakfast on houseboats.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Wheat Flour (Atta) — 250 g (ground)
- Active Dry Yeast (Bakery Grade) — 2 tsp (whole)
- sesame seeds — 20 g (whole)
- sugar — 1 tsp (whole)
- Curd — 4 tbsp (whole)
- Butter — 25 g (whole)
- salt (optional) — 5 g (whole)
Tempering
Method
- Mix the wheat flour, salt, sugar and yeast. Add curd, oil and warm water, and knead into a soft dough.
- Cover and let the dough rest in a warm place for 1-2 hours, until it doubles in size.
- Divide into portions, roll into ovals, and press sesame seeds onto one side of each.
- Slap onto the wall of a hot tandoor (or bake in a very hot oven) until puffed and lightly charred, 2-3 minutes.
- Brush generously with butter and serve hot, traditionally with morning tea on Srinagar houseboats.
