
Matar Kulcha

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- sugar — 1 tsp (whole)
- amchur powder (optional) — 2 g (powder)
- chaat masala powder — 3 g (powder)
- Ginger — 10 g (chopped)
- green chillies (optional) — 8 g (chopped)
- onion — 60 g (chopped)
- green peas — 250 g (chopped)
- salt (optional) — 8 g (whole)
- cumin powder — 3 g (powder)
- Curd (optional) — 4 tbsp (whole)
- Wheat Flour (Atta) — 250 g (ground)
- Tomato — 60 g (chopped)
Tempering
Method
- Pressure-cook the green peas with salt and a little water until soft.
- Heat oil and saute the ginger and green chilli, then add chopped onion and tomato; cook until soft.
- Add the cumin powder, chaat masala and amchur; stir in the cooked peas and mash lightly, simmering to a semi-thick curry.
- Meanwhile, knead the wheat flour with curd, sugar and salt into a soft dough; rest until it rises.
- Roll the dough into ovals and cook on a hot tawa or tandoor until puffed and browned; brush lightly with ghee/oil.
- Serve the hot matar curry topped with raw onion and coriander leaves, alongside the kulcha.
