
Jammu Kaladi Kulcha
Fried smoked cheese in bread. Jammu signature street food using local kaladi cheese.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
- onion (optional) (garnish) — 50 g (sliced)
Main
- salt (optional) — 5 g (whole)
- Kalari Cheese (Dogra Fresh Cheese - J&K) — 150 g (whole)
- Wheat Flour (Atta) — 250 g (ground)
Tempering
- oil — 2 tbsp (whole)
- Butter — 15 g (whole)
Method
- Knead the wheat flour with salt and water into a soft dough, divide into portions, and roll out into round kulchas.
- Heat oil in the centre of a hot tawa and place the Kaladi cheese on it. Keep the flame low-medium and gently press the cheese; cook for 2-3 minutes per side until browned.
- Cook the kulchas on the tawa until lightly browned on both sides, then brush with butter.
- Slice the kulcha open, place the hot cooked Kaladi cheese inside, and top with sliced onion and coriander leaves.
- Serve hot with green mint chutney and sweet tamarind-date chutney.
