Method

  1. Mix the wheat flour, sugar and salt; rub in the ghee and oil until the mixture turns crumbly.
  2. Add water gradually and knead into a firm, slightly stiff dough. Rest for 30 minutes.
  3. Divide into small balls and flatten into thick round discs. Press poppy seeds onto the top of each.
  4. Bake in a preheated oven (or traditional tandoor) at around 180C for 15-20 minutes, until golden and crisp.
  5. Cool slightly - the kulcha should be crisp, hard and flaky. Serve with kahwa or noon chai.
